The bavette steak, or the flap steak, is a cut from the bottom of the sirloin. Bavette means "bib" in french, translating to the "bib of the sirloin". It's a lesser-known cut, mainly because there is very little bavette available compared to other cuts! This cut has loose grains, is full of flavor, and if cooked properly, tender and delicious! This is one of our favorite cuts on the ranch!

Raised on native prairie grass and finished on distillers grain ration, our beef reflects regenerative practices, humane handling, and environmentally conscious ranching.
